1 lb. ground beef
1 medium head lettuce
2 tomatoes - diced
1 8 oz. bag mild shredded cheddar cheese
1 bag Doritoes
1 16oz. bottle Catalina dressing
Cook beef until brown. Drain and rinse with cold water. Mix beef, lettuce, cheese, and tomatoes in large bowl. Break doritoes in bag. Add to above ingredients. Add dressing and mix well.
This is great for a party or dinner for 4 with leftovers for lunch the next day!
I wanted to share some of our family's favorite recipes. My husband seems to like whatever we have, but pleasing our 8 and 6 year old sons (at the same time no less) proves to be a challenge! I probably won't post every day, but I will post old and new favorites as we eat them! I love finding new recipes to try and hope you will too!

Baked Ziti
1 lb. ziti noodles
3/4 lb. ground beef
1 jar spaghetti sauce
15 oz. ricotta cheese
8 oz. shredded mozzarella cheese
1 tablespoon dried parsley flakes
1 egg
1 teaspoon dried oregano leaves
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons grated Parmesan cheese
Heat oven to 375 degrees. Cook pasta according to directions. In large bowl, stir together hot pasta, half jar spaghetti sauce, ricotta cheese, mozzarella cheese, parsley, egg, oregano, garlic powder, salt and pepper. In 13x9x2 inch baking dish, spoon pasta mixture; top with remaining half jar of spaghetti sauce. Sprinkle with Parmesan cheese; cover with foil. Bake 30 minutes.

Salsa Chicken and Black Bean Soup
1 pound boneless, skinless chicken breasts or tenderloins
2 cans black beans, drained and rinsed
4 cups chicken broth
1 cup frozen corn
1 16 oz. jar prepared salsa
1 1/2 tsp. cumin
Add everything to the crockpot and cook on low 8 hours. After 8 hours, take the chicken out and cut up or shred. Put chicken back in soup. Serve plain or with chips, cheese, sour cream, avocado, cilantro, etc.
This is a delicious soup that yields lots of leftovers!
